🍓Berry-Topped Vanilla Layer Cake Recipe🍓

Ingredients:
For the Cake:

2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
1 cup whole milk
For the Buttercream Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2 teaspoons vanilla extract
4-6 tablespoons heavy cream (adjust for desired consistency)
For Decoration:
Fresh mixed berries (e.g., raspberries, blackberries, blueberries, and strawberries)
Fresh mint leaves
Powdered sugar for dusting

Instructions:

Step 1: Bake the Cake

Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.

In a bowl, sift together the flour, baking powder, and salt.

In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 2: Make the Buttercream Frosting

In a large bowl, beat the butter until creamy.
Gradually add the powdered sugar, mixing until smooth.
Stir in the vanilla extract and add the heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency.

Step 3: Assemble the Cake

Place one cake layer on a serving plate or cake stand. Spread a thick layer of frosting evenly over the top.

Place the second cake layer on top and cover the entire cake with a smooth layer of frosting.
Use a small spatula or fork to create decorative textures on the sides of the cake.

Decoration Tips:

Berry Topping: Arrange fresh berries on top of the cake in clusters, leaving space in the center for a strawberry or larger garnish. Add a few berries around the base for added elegance.

Mint Leaves: Place fresh mint leaves near the center strawberry for a pop of green.

Piping Swirls: Use a star-tipped piping bag to create swirls of frosting along the edges of the cake for a professional finish.

Powdered Sugar Dusting: Lightly dust the top of the cake and berries with powdered sugar for a delicate, snowy effect.

Layer Precision: Chill the cake after applying the frosting to ensure clean, stable layers.
This elegant vanilla cake with fresh berries and creamy buttercream is perfect for special occasions or as a centerpiece dessert.
