Preparation
Step 1: Prepare the marinade
In a bowl, mix the olive oil, lemon juice, white vinegar, garlic, oregano, paprika, salt and pepper.
Add beef cubes to the marinade, mix well to coat, cover, and refrigerate for at least 1 hour (ideally 4 hours or all night).
Step 2: prep the vegetables.
While the meat marinades, prepare the peppers and onions. Cut them into pieces similar to meat cubes.
Step 3: Assemble the skewers
If you use wooden skewers, soak them in water for 20 minutes to prevent them from burning.
Alternate the skewers of beef chops, peppers, and onion quarters.
Step 4: Grill the skewers
Preheat a grill or skillet over medium-high heat. Grease the surface lightly.
Grill the skewers for about 10-12 minutes, flipping regularly to achieve an even cook and a golden, caramelized exterior.
Step 5: Serve
Arrange the skewers on a large plate or platter.
Serve with warm pita bread, tzatziki, colorful Greek salad, and squeezed lemon squashes on skewers.
Top with fresh parsley for a touch of coolness.
Tips
Meat variation: You can substitute beef with chicken or lamb depending on your preference.
Vegetarian option: use mushrooms, zucchini and halloumi instead of meat.
Enjoy your meal!
