Stuffed Mushroom Dip
Ingredients (for 6 people)
250g fresh mushrooms (Paris mushrooms or other)
1 chopped garlic clove
1 finely chopped onion
2 tablespoons olive oil or butter
120 g cream cheese (Philly style) rolled
100 gm thick sour cream
50 g of grated parmesan
50 g of grated mozzarella
1 tablespoon chopped fresh parsley
1/2 teaspoon thyme (optional)
Salt and pepper to taste
Sweet paprika (for garnish, optional)
Preparation
1. Preparing the mushrooms
Clean the mushrooms and finely chop them.
Heat the olive oil or butter in a skillet over medium heat.
Add the minced onion and stir until it becomes translucent.
Add mushrooms and minced garlic, then cook for about 5-7 minutes, until mushrooms have released their water and are slightly golden brown. Salt, pepper and add thyme if desired.
2. Preparing the creamy base
In a bowl, mix the cream cheese and sour cream until you achieve a smooth consistency.
Add parmesan and grated mozzarella. Mix it up well.
3. Putting together the dip
Add the cooked mushroom mix to the creamy base. Mix until all the ingredients are well combined.
Season with salt and pepper if necessary.
4. Cooking up the dip
Preheat the oven to 180°C (350°F).
Pour the preparation in a baking dish.
Sprinkle slightly sweet paprika for color (optional).
Bake for 15 to 20 minutes, until top is golden brown and slightly bubbling.
5. Serve
Fresh parsley parsley parsley before serving.
Serve warm with toasted bread slices, crunchy vegetables or tortilla chips.
Tips
For a gourmet twist, add some crispy bacon bits or chopped walnuts as a garnish.
The dip can be prepared ahead of time and heated just before serving.
You can substitute mozzarella with gruyere or cheddar to change the flavors.
