For the Crust:
1 ½ cups graham cracker crumbs
2 tablespoons honey or sugar
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons lemon juice
3 large eggs
1 cup sour cream

1 ½ cups mixed berries (strawberries, blueberries, raspberries)
3 tablespoons honey or sugar
Neon food coloring (pink, blue, green, etc.)
1 tablespoon lemon juice
Step-by-Step Instructions:
Prepare the Crust:
Preheat your oven to 325°F (163°C).
In a medium bowl, mix the graham cracker crumbs, melted butter, and honey (or sugar) until well combined.
Press the mixture firmly into the bottom of a springform pan (9-inch) to form a crust.
Bake for 8-10 minutes, then remove from the oven and let it cool completely.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
Add the vanilla extract and lemon juice, and continue mixing until combined.
Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
Fold in the sour cream until the mixture is smooth and well-blended.
Assemble the Cheesecake:
Pour the cheesecake filling over the cooled graham cracker crust.
