Chicken Tandoori Recipe
Here’s a classic Chicken Tandoori recipe:
Ingredients
For the Marinade
1 kg chicken (whole or pieces, skinless)
1 cup plain yogurt
2 tbsp ginger-garlic paste
1 tbsp red chili powder (adjust to taste)
1/2 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
1 tbsp Kashmiri red chili powder (for color)
Juice of 1 lemon
2 tbsp mustard oil or vegetable oil
Salt to taste
Optional Garnish
Lemon wedges
Onion rings
Fresh coriander leaves (chopped)
Instructions
Step 1: Prepare the Chicken
Wash and pat dry the chicken. If using a whole chicken, make deep slits on the surface to help the marinade penetrate.
Step 2: Prepare the Marinade
In a large bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, Kashmiri chili powder, lemon juice, mustard oil, and salt.
Mix well to form a smooth marinade.
Step 3: Marinate the Chicken
Rub the marinade generously over the chicken, ensuring it coats well and gets into the slits.
Cover and refrigerate for at least 4 hours, preferably overnight, for the flavors to develop.
Step 4: Cook the Chicken
Option 1: Using an Oven
Preheat your oven to 220°C (430°F).
Place the marinated chicken on a greased baking tray or on a wire rack.
Bake for 25-30 minutes, turning occasionally and basting with oil or melted butter.
For a charred effect, broil the chicken for 3-5 minutes at the end.
Option 2: Using a Grill
Preheat the grill to medium-high heat.
Place the chicken pieces on the grill and cook for 15-20 minutes on each side, basting with oil or butter, until charred and cooked through.
Option 3: Using a Stove
Heat a grill pan or a heavy-bottomed skillet.
Cook the chicken on medium heat, turning occasionally and basting with oil or butter, until the chicken is fully cooked and slightly charred.
Step 5: Serve
Garnish with lemon wedges, onion rings, and fresh coriander leaves.
Serve hot with naan, roti, or a side of mint chutney.
