Orange Chicken Recipe
Ingredients:
3 Eggs whisked
1/3 cup Cornstarch
1/3 cup Flour
1 teaspoon Salt
1 teaspoon black pepper
Oil for frying
1 cup homemade orange sauce (homemade recipe below)
INSTRUCTION
To make chicken:
Place flour and cornstarch in a shallow dish. Add salt and pepper.Mix.
Whisk eggs in shallow dish.
Dip chicken pieces in egg mixture and then flour mixture. Place on plate.
Heat 2 -3 inches of oil in a heavy-bottomed pot over medium-high heat. Using a thermometer, watch for it to reach 350 degrees.
Working in batches, cook several chicken pieces at a time. Cook for 2 - 3 minutes, turning often until golden brown. Place chicken on a paper-towel-lined plate. Repeat.
Toss chicken with orange sauce. You may reserve some of the sauce to place on rice. Serve it with a sprinkling of green onion and orange zest, if so desired.
Homemade Orange Sauce:
1 cup orange Juice
1/4 cup sugar
1/4 cup brown sugar
2 tablespoons rice vinegar
1/4 cup soy sauce
1 tablespoon fresh ginger minced
2 cloves garlic finely diced
1 teaspoon red pepper flakes
1 orange zested
1 tablespoon cornstarch
Add orange juice, white and brown sugar, rice vinegar, soy sauce, ginger, garlic, and red chili flakes to a medium saucepan. Stir and cook for 3 minutes over medium heat.
Whisk one tablespoon of cornstarch with 2 tablespoons of water to form a slurry in a small bowl.
Add the slurry to the orange sauce and whisk together. Continue to cook for 5 minutes until the mixture begins to thicken.
Once the sauce is thickened, remove from heat and stir in orange zest.
Sweet and Sour Chicken Recipe
4 Boneless Skinless Chicken Breast (cut into bite-size pieces)
1 tsp salt
1/2 tsp pepper
1/2 cup flour
1/2 cup cornstarch
3 eggs beaten
1 cup homemade sweet and sour sauce
Red, Yellow, or Orange Pepper (cut into bite-size)
1/4 White Onion (cut into bite-size pieces)
Fresh Pineapple (cut into chunks)
Oil for frying
Sweet and sour sauce:
1 cup canned pineapple juice
3/4 cup light brown sugar
1/3 cup rice vinegar
3 tablespoons ketchup
2 tablespoons soy sauce
1/4 teaspoon garlic powder
1 1/2 tablespoons cornstarch dissolved in 2 tablespoons water
INSTRUCTION
Place all of the sauce ingredients, except for the cornstarch slurry, in a small saucepan and bring to a boil. Stir in the cornstarch slurry and simmer for another minute until thickened, stirring constantly. Set aside.
Chicken:
Sprinkle chicken with salt. Place flour and cornstarch in a shallow dish. Whisk eggs in another shallow dish. Dip chicken pieces in egg mixture and then flour mixture. Place on a plate.

When done cooking remove all but a tablespoon of the oil. Add the bell peppers, onion and pineapple and cook for 1-2 minutes, until crisp-tender. Add 1 cup of homemade sweet and sour sauce and stir to coat the pieces and cook for 30 seconds. Add the chicken pieces back in and stir until the sauce has thickened.
Serve immediately, with optional garnishes of sesame seeds or green onions.
Chicken Sesame Recipe
FOR THE CHICKEN
4 chicken breasts, cut into bite size
2 eggs beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all purpose flour
1/2 cup cornstarch
oil for frying
FOR THE SAUCE
1 teaspoon vegetable oil
1 teaspoon minced fresh garlic
1/4 cup honey
1/4 cup soy sauce
2 tablespoons ketchup
3 tablespoons brown sugar
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 teaspoons cornstarch
2 tablespoons sesame seeds
2 tablespoons sliced green onions
INSTRUCTIONS
Place the eggs, salt and pepper in a bowl. Stir to combine.
Place the flour and 1/2 cup of cornstarch in a shallow bowl or on a plate. Stir to combine.
Dip each piece of chicken into the egg mixture, then into the flour. Repeat the process with all of the chicken.
Heat 3 inches of oil in a deep pan to 350 degrees F.
Add 7-8 pieces of chicken to the pan. Cook for 5 minutes or until crispy and golden brown. Repeat the process with the remaining chicken.
Drain the chicken on paper towels.
While the chicken is cooking, combine the honey, soy sauce, ketchup, brown sugar, rice vinegar, sesame oil and 2 teaspoons of cornstarch in a bowl.
Heat the teaspoon of oil in a large pan over medium heat. Add the garlic and cook for 30 seconds. Add the honey sauce mixture and bring to a simmer. Cook for 3-4 minutes or until just thickened.
Add the crispy chicken to the pan and toss to coat with the sauce. Sprinkle with sesame seeds and green onions, then serve.
