Ingredients:
_For the Cupcakes:_
- 1 box strawberry cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 teaspoon vanilla extract
_For the Strawberry Crunch Topping:_
- 1 cup freeze-dried strawberries, crushed
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
_For the Whipped Cream Frosting:_
- 2 cups heavy cream, chilled
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
_Strawberries for garnish (optional)_

1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. In a large bowl, combine strawberry cake mix, eggs, vegetable oil, water, and vanilla extract. Mix until well combined.
3. Fill each cupcake liner 2/3 full with the batter.
4. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
5. While the cupcakes are baking, prepare the Strawberry Crunch Topping. In a bowl, mix crushed freeze-dried strawberries, granulated sugar, and melted butter until crumbly.
6. Once the cupcakes are cooled, sprinkle the Strawberry Crunch Topping over each cupcake.
7. For the Whipped Cream Frosting, beat chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
8. Pipe or spread the whipped cream frosting on top of the cupcakes.
9. Optional: Garnish with fresh strawberries.
