Twix Cheesecake Bars

Ingredients for Crust:

1 cup butter, room temperature
2 cups all-purpose flour
½ cup powdered sugar
¼ teaspoon baking powder

Ingredients for Filling/Cheesecake:

2 ½ cups chopped TWIX candy bars
16 ounces cream cheese, at room temperature (2 - 8 oz. packages)
½ cup granulated sugar
2 eggs
½ teaspoon vanilla extract
¾ cup semi-sweet chocolate chips
Caramel sauce (homemade or store-bought)

Directions for Crust:

Preheat oven to 350°F (175°C).
In a large bowl, cream together butter and powdered sugar until light and fluffy.
Gradually mix in flour and baking powder until evenly incorporated and a dough forms.
Line an 11x7-inch baking dish with foil. Press the dough evenly into the bottom of the dish.
Bake for 14-17 minutes, or until edges are lightly browned. Cool on a wire rack for at least one hour.

Directions for Bars:

Lower oven temperature to 325°F (163°C).
Using an electric mixer, beat cream cheese, granulated sugar, vanilla extract, and eggs on medium speed until smooth and clump-free.
 
Fold in 2 cups of the chopped TWIX candy bars, reserving the remaining ½ cup for topping.
Pour the cheesecake mixture over the cooled crust, spreading evenly.
Bake for 45-50 minutes, or until set. Cool on a wire rack for 30 minutes.
Melt chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each, until smooth.
 
Drizzle a light layer of melted chocolate over the cooled bars, sprinkle with the reserved chopped TWIX, add another layer of chocolate, and finish with a drizzle of caramel sauce.
Chill until firm, about 6 to 8 hours or overnight. Cut into bars and serve.
