Avocado Tomato Salad
Ingredients:
Fresh arugula or mixed greens (base)
Ripe avocados, diced
Cherry tomatoes, halved
Red onion, thinly sliced
Fresh parsley or cilantro, chopped
Salt and black pepper (to taste)
2 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice (or vinegar of choice)
Instructions:
Prepare the Ingredients :
Halve the cherry tomatoes, dice the avocado, and slice the red onion thinly. Chop the fresh parsley or cilantro.
Assemble the Salad :
In a large bowl, add arugula or mixed greens as the base.
Top with avocado, cherry tomatoes, red onion, and fresh herbs.
Season and Dress :
Drizzle the salad with olive oil and fresh lemon juice.
Season with salt and freshly ground black pepper.
Toss and Serve :
Gently toss to mix the ingredients without mashing the avocado.
