Corn, Avocado, and Tomato Salad Corn, Avocado, and Tomato Salad Ingredients: 2 cups corn kernels (fresh, frozen, or canned) 1-2 avocados , diced 1 cup cherry or grape tomatoes , halved 1/4 red onion , thinly sliced Juice of 1 lime 2 tablespoons olive oil Salt and black pepper to taste Fresh cilantro , chopped (optional) Instructions: Prepare the Ingredients: If using fresh corn, cook it by boiling for 3-5 minutes, then cool.
